The Maison d'Aisey, held in 1820 by Jacques Copin, was taken over by his daughter Ernestine and her husband Victor Roy, then by their son Armand Roy, who renamed it the house of travelers from Aisey sur Seine, which later became the Hôtel Roy and then finally Hotel du Roy. This establishment has endured and gone through time through its successive owners.


Located in Aisey sur Seine, commune of Chatillon sur Seine with 176 inhabitants, crossed by the Seine which receives the Brevon and the Nion stream. Aisey owes its name to the Dukes of Burgundy, who owned a fortified castle there which was destroyed in the 18th century for the benefit of the Chateau de Tavannes d'Aisey and as well as a hunting territory reserved for the King and the Dukes of Burgundy.

1h30 from Paris by TGV (Gare de Montbard), this charming village with these two bridges crossing the Seine, its wash house, its mill, its church and the Chateau de Tavannes, is located in a very attractive region for various reasons that can satisfy a large number of travelers.


Around Aisey, producers offer short circuit products such as organic vegetables from the Borde vegetable garden (Chemin d'Aisey), cheeses from Fromagerie d'Origny and La Barque, honey from the Saint Germain mill Rocky, etc.
